Blueberry Zucchini Bread Recipe
With blueberry season upon us and zucchini season in, here’s a great recipe that I use!
Ingredients
- 1 pint blueberries
- 3 C Flour
- 2 C shredded zucchini
- 1 Tbsp Cinnamon
- ¼ teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1¼ C sugar
- 1 C light brown sugar
- 3 teaspoons vanilla
- 1 C vegetable oil
- 3 eggs
Instructions
- Preheat oven to 350 F
- Lightly grease 4 mini-loaf pans
- In a large bowl, beat together the eggs, oil, vanilla, and sugars
- Fold in the zucchini
- Beat in the flour, salt, baking powder, baking soda, and cinnamon
- Fold in the blueberries
- Pour into mini-loaf pans
- (I lightly sprinkle loaves with sugar)
- Bake 50 minutes in the preheated oven, or until a toothpick comes out clean.
