Valentine’s Day Recipes: Heart-Shaped Meatloaf and Chocolate Cheesecake

It’s Valentine’s Day, so I thought I’d share a few recipe ideas to make the day special.  The first one isn’t so much a recipe as an idea of something fun to do for the kids.  A few years ago we came up with the idea of a heart-shaped meatloaf for Valentine’s Day, and it’s become a tradition.  (My 5-year-old calls it “Meat Love” instead of meatloaf!)  My meatloaf recipe is pretty simple: ground beef, an egg, bread crumbs, and a squirt each of mustard and ketchup–smushed together, topped with more ketchup, and baked till it’s done.  We do meatloaf cupcakes for April Fool’s Day (and somehow manage to “fool” Daddy every time!)  But for Valentine’s Day, we did this instead:

Use my recipe or your own favorite one, but it takes less time to bake than in a loaf pan.  If your kids like meatloaf, they’ll get a kick out of it.  Let us know if you try it out!
