Roasted Olive Oil Potatoes

Perfect addition to any meal! Super easy to prep!
Serves: 8
  • 6 - 8 Washed and Dried Russet Potatoes
  • ¼ Olive Oil
  • ¼ Melted Butter (not necessary - I just like the flavor)
  • Kosher Salt
  • Fresh Ground Pepper
  • Other seasonings of choice (red pepper, garlic, fresh parsley or rosemary, etc.)
  1. Heat oven to 450 degrees
  2. Wash and allow potatoes to dry completely
  3. Cut into eighths
  4. Throw into a very large mixing bowl
  5. Drizzle olive oil and butter in
  6. Toss to cover thoroughly
  7. Season aggressively with kosher salt
  8. Add freshly ground pepper
  9. Add parchment paper to cookie sheet
  10. Place potato wedges skin side down
  11. Sprinkle with additional spices if want (pictured has half sprinkled with cayenne pepper)
  12. Bake for 35 - 45 minutes
