Blueberry Zucchini Bread Recipe
 
 
Ingredients
  • 1 pint blueberries
  • 3 C Flour
  • 2 C shredded zucchini
  • 1 Tbsp Cinnamon
  • ¼ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1¼ C sugar
  • 1 C light brown sugar
  • 3 teaspoons vanilla
  • 1 C vegetable oil
  • 3 eggs
Instructions
  1. Preheat oven to 350 F
  2. Lightly grease 4 mini-loaf pans
  3. In a large bowl, beat together the eggs, oil, vanilla, and sugars
  4. Fold in the zucchini
  5. Beat in the flour, salt, baking powder, baking soda, and cinnamon
  6. Fold in the blueberries
  7. Pour into mini-loaf pans
  8. (I lightly sprinkle loaves with sugar)
  9. Bake 50 minutes in the preheated oven, or until a toothpick comes out clean.
