Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

The hubs has a busy work week ahead, and won’t be home for a few of the meals, so I’m throwing in a simple kid favorite, along with a couple others that will leave him with decent leftovers to take in his lunch the next day.

Here’s my plan:

Monday:  Steak, baked potatoes, and green beans (I snagged those $6.99/lb T-bones on sale at Giant Eagle this week…happy hubby!)

Tuesday:  Fish sticks, Shells & Cheese (got my 50¢ Shells & Cheese at GE too!), carrots & celery, apple slices

Wednesday:  Meatball subs (leftover meatballs frozen from last week), baked sweet potato fries, homemade applesauce

Thursday:  Fundraiser ham dinner at church

Friday: Baked breaded chicken breast, rice, broccoli

Saturday: Cheeseburgers, smiley fries, peas

Sunday: Date night!  Maybe we’ll take advantage of one of these Valentine’s Day gift card & dining deals!
