Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

I’m on a mission to use up some of the things in my freezer, so that’s where the inspiration for most of my meals came from this week. 

Here’s my plan:

Monday:  Chicken Pot Pie

Tuesday:  Soft tacos with toppings, green beans

Wednesday:  Homemade Baked Potato Soup, carrots & dip

Thursday: Matthew’s birthday dinner–he’s turning 7!  I think he settled on Christmas Breakfast and fruit & yogurt smoothies 🙂

Friday: Fish sticks and mac & cheese(the kids have been begging for it, and I’ll want something easy with getting ready for the birthday party the following day!)

Saturday: Birthday party: Stromboli, yogurt sticks, fruit & veggies, and other fun treats (I’ll share some of the Lego Star Wars-themed fun next week!)

Sunday: Some of our fun and delicious Super Bowl snack favorites–watch for recipes throughout the week!
