Cooking on a Shoestring: Monday Meal Planning

Good Monday morning, friends!  Time to share our dinner plans for the week.  Meal planning is an important tool for stretching your budget.  Plan around food you have on hand, along with what’s on sale for the week.

Last week at our house, we had a mama with a cold and a daddy who was traveling for work the second half of the week, so the meals didn’t go exactly as planned.  I’ll admit I let the kids talk me into hitting Wendy’s on the way to basketball practice on Thursday rather than cooking…but we went cheap, and it’s the exception rather than the rule, thanks to our meal plan.  As long as we can stick to the plan most of the time, an occasional cheeseburger “date night” won’t break the budget 😉 

This week I’m feeling better and the hubs will be home, so here’s what we’re eating this week.  How ’bout you?

Monday: Poor Man’s Lasagna, garlic bread, homemade applesauce 

Tuesday: Ham loaf, mac & cheese, veggie

Wednesday: Eat at church for Family Night

Thursday: Chicken Pot Pie (bumped up from last week)

Friday:  Chicken and gnocchi soup, homemade bread

Saturday: Birthday party for the little guy: hot roast beef sandwiches, veggies, fruit, chips, cake

Sunday: Thanksgiving dinner at church (I think I’m taking Pumpkin Roll)
