It’s Monday–time to share our dinner-time game plans for the week! It’s our one somewhat “normal” week between getting home from vacation and the craziness of summer camp and the start of soccer practices next week. My food goals for the week are to finish re-stocking the house after vacation (I used up most of my stockpile stuff before we left since we’d be gone so long); and to replenish my supply of quick & easy pre-cooked stuff in the freezer (we took a bunch with us for vacation, so my quickie meal supply is looking pretty sad!). With that in mind, here’s our meal plan for this week:
Monday: Baked chicken breasts, baked potatoes, fresh green beans, watermelon
Tuesday: Stuffed pork chops, peas, fresh fruit
Wednesday: Pot roast, mashed potatoes & gravy, broccoli (leftovers to the freezer for Beef & Noodles on a soccer night!)
Thursday: Date night–using a gift card!
Saturday: Graduation party for dinnertime–hoping to use my day off from dinner cooking to do a little freezer cooking before we go
Sunday: Spaghetti and meatballs–making a BIG batch to put 2-3 dinners’ worth in the freezer!
