Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  After a busy run-around weekend, I was thankful for a fairly mellow day today with an easy dinner: once a month my husband has a dinner meeting for work at El Campesino in Canton, and I finally got smart and told him to bring home takeout for me.  I even found a $3/2 dinners coupon, so my meal will only add a few bucks to the bill.  Win-win! 🙂 

As for the rest of the week, I’m really working on using what’s in our chest freezer.  It needs defrosted some time in the near future, so my goal is to really use up what’s in it, and try not to add too much to it.  My goal is to get enough used out of both freezers that I can defrost it before vacation this summer, then leave it unplugged while we’re gone.  So, this week’s plan isn’t anything spectacular, but everything planned is already sitting in the freezer, just waiting to be eaten. 

Here’s our plan for this week:

Monday: Leftovers for the kiddos, dinner meeting for the hubs, carryout for me!

Tuesday: Crock pot roast beef, mashed potatoes, & gravy

Wednesday: BBQ ribs, noodles, broccoli

Thursday:  Easy Cheesy Chicken, rice, green beans

Friday:  Hamburgers/hot dogs on the grill, fresh fruits & veggies

Saturday:  Dinner plans with friends

Sunday: Breakfast for dinner (busy day–need something simple!)
