Cooking on a Shoestring: Monday Meal Planning

Happy Monday!  In last week’s Monday Meal Plan I was hoping that spring would be just around the corner…in Northeast Ohio it’s painfully obvious today that I was wrong, huh? 🙂

Last week, I ended up shuffling my meal plan quite a bit, and despite the fact that I didn’t do most things on the night I’d planned them, there was really only one thing on the list I didn’t do (when a massive headache combined with a super sweet Papa John’s 50% off deal combined to make me cave and order pizza!)  Some might call that a failure because I didn’t stick like glue to my plan…to me it’s a success because I had a list at my fingertips to choose from and make things work into my day, and on the day when nothing worked, we got a great deal on pizza (which is also a huge treat to the kids…win-win!).  I’ll bump the meal we didn’t have last week to this week, and we’re ready to roll again.

For some people, it works to have a strict “What’s on the Plan is What’s Served” policy.  That doesn’t seem to work for us around here, but I find that even if the days get switched around, I usually serve most of what’s on my plan most weeks.  To me, it’s OK to allow a bit of wiggle room, because we never know when a last-minute play date might pop up or someone might get sick.  Just wanted to offer a little reassurance to anyone who might feel like it’s not worth doing if you’re not strictly sticking to the daily plan each week…as long as you’re using most of the plan most of the time, it’s probably helping!

Here’s our plan for this week (subject to flexibility and adjustment in my household! 😉 ):

Monday: Chicken Enchiladas

Tuesday: Pork roast, Mashed potatoes, and a veggie (with enough leftover pork to freeze for BBQ pork sandwiches another week!) *bumped from last week

Wednesday: Dinner at church for Family Night

Thursday: Meatloaf Cupcakes, rice, broccoli (kid request)

Friday: Stromboli, fresh fruit, fresh veggies

Saturday:  Baked stuffed French Toast, berries, sausage links (hoping to take pics and share this recipe–it would make a great Easter brunch addition!)

Sunday: Ham, scalloped potatoes, green beans
