Cooking on a Shoestring: Monday Meal Planning

Happy Monday!  After a beautiful weekend it looks like we’re back to the grey skies again today.  Here’s hoping that sunny spring weather is just around the corner!

Here’s our game plan for dinners this week…nothing spectacular, but it’ll get dinner on the table and food in our bellies while keeping my sanity and not breaking the bank.  I’m really working on using up some of the food I have in my freezer, so those items that are already bought and paid for (and patiently waiting to be used) are what drove my meal plan this week. 

Monday: Beef & noodles (easy peasy using leftover pot roast & gravy from last week!), applesauce, carrot sticks

Tuesday: Chicken Stir Fry

Wednesday: Dinner at church for Family Night

Thursday: Pork roast, Mashed potatoes, and a veggie (with enough leftover pork to freeze for BBQ pork sandwiches another week!)

Friday: Grilled Cheese, Tomato Soup, and fresh fruit (not sure how it’s possible that we got this far into Lent without having this favorite!)

Saturday:  Spaghetti & Meatballs, Garlic bread, salad or applesauce

Sunday: Crock Pot Boneless BBQ Ribs, Au Gratin Potatoes, green beans
