Cooking on a Shoestring: Monday Meal Planning

I had to laugh last week when our meal plan went off the rails before we even reached dinnertime on Monday–I had planned on eating dinner on our way home from Michigan, but we ended up getting home in time for dinner.  Good news for the wallet…not so much for a mama who had to scramble to feed six people 🙂  Nights like this are when it’s handy to have a few quick dinner options up your sleeve: we call them the “Fast Five” around here.  For me, that includes standbys like grilled cheese, breakfast for dinner, and spaghetti, but everyone has their favorites.

A few other nights last week didn’t go quite according to plan either; we adjusted things based on my husband’s work schedule, but knowing I had options available to choose from as I made those adjustments helped.  It’s important to know that meal planning may not always go perfectly, but that’s not a reason to give up.  As long as it’s helpful to you with your time management and your budget, it’s worth a little extra effort at the beginning of the week.

Anyway, here’s our game plan for this week…hopefully we’ll do better with sticking to the actual plan this week!

Monday: Crock Pot Boneless BBQ Ribs, Au Gratin Potatoes, green beans

Tuesday: Baked chicken breast, rice, steamed broccoli

Wednesday: Dinner at church for Family Night

Thursday: Breakfast for dinner (mama’s teaching a coupon class, and daddy makes the best pancakes!)

Friday: Ravioli with marinara sauce, salad, carrot sticks (I think I might try this Crock Pot Ravioli Bake!)

Saturday:  Cheeseburgers, baked french fries, peas (this got bumped from last week)

Sunday: Baked potato soup, veggies & dip, fresh fruit
